Happy Sunday! Is everyone else loving the sunshine today? It’s been a weekend of fun and planning around here.
Saturday morning I met with Heather to set up my next month’s workouts. I gave her a goal of getting stronger and leaner rather than a weight related goal. This plan will definitely be making me strong! I’ll be lifting 4 days a week with 2 yoga days and 1 rest day mixed in. Shortish cardio workouts will be done on lifting days and 1 yoga day. No full cardio days, just catch an outdoor run whenever I get a chance:-)
Saturday night we had a grown ups night out while girlie enjoyed a sleepover at her grandparents’. This was the first chance we had to celebrate Handsome Husband’s birthday with friends. Dinner and drinks at The Farm then off to The Barley Pub for good beer and live music. Yours truly was the good girl for the night. I had one drink with my dinner then sipped one beer at the pub before switching to diet soda for the rest of the evening and driving us home safely. Odd sight of the night: there were people knitting in the pub. Sitting at a table right in front of the rockin’ band. Knitting. I’m not sure if it was deadline dedication or attention seeking. Hmm?
Today I did our meal planning, grocery shopping, and breakfast prep for the week.
Here’s what we’ve got lined up for meals at the Good ‘n Good for Ya House:
Peanut Butter Pork: This is one of HH’s favorites! Asian inspired pulled pork in the slow cooker. It’s actually been driving us nuts smelling it all afternoon.
Lemon Rosemary Chicken: No real recipe, I’m just going to roast some chicken breasts with…lemons and fresh rosemary. Duh.
Homemade Pizza: more like “home assembled” but yummy and fun. Store-bought whole wheat dough, jar marinara, part skim shredded mozzarella, and toppings. This week it’ll be spinach for me and Canadian Bacon for girlie. (HH has a thing so it’ll be girls night. Maybe we’ll save him some?)
London Broil: Handsome Husband is in charge. I may help out by making salads or broccoli or something.
BFD: Breakfast for Dinner. Family favorite. I have no idea what I’ll make yet but I know it’ll be a win. Hmmm…..
I’ve been seeing yummy looking egg cups and savory muffins all over Pinterest so I decided to make some today. I was planning them to supplement the protein pancakes I pre-made for the week but we’ve already polished them off!
Ham and Egg Baskets
2 egg whites
6 slices deli honey-type ham (I used Maple and Brown Sugar Ham)
1/2 cup reduced fat shredded cheddar (I like Cabot)
Preheat oven to 400 degrees. Spray 6 sections of a muffin tin with cooking spray. Scramble the eggs with a little salt. Line the muffin tins with ham slices. Divide the shredded cheese amongst the ham “baskets”. Pour egg mixture carefully into each ham “basket”. Bake for 15 minutes.
We also had a big First today. Girlie lost her first tooth!! Which was a milestone I didn’t tear up over! (I am such a cryer.) Good thing this isn’t really the tooth fairy ’cause I might find myself in trouble with Handsome Husband for waiting up.
