Sunday: Chipotle Beef in Acorn Squash. This is a carryover from last week. I kept forgetting to thaw the meat. I had to buy a new avocado though. (note, i just noticed I was focused on fitting this on the board that I spelled it wrong. ah well)
Monday: Steak and Broccoli. Has anyone else noticed that I don’t even have to erase this? It’s just such a good quick dinner for a Monday night.
Tuesday: Taco Tuesday! I’ve noticed a lot of people posting Taco Soup recipes but they all seem to include a packet of ranch dressing mix. If you’ve tried this let me know what you think and especially how ranch-y it is. I’m not a big ranch fan but I love the idea of taco soup!
Wednesday: Omelets. I’m thinking spinach, cheddar, and maybe a little bacon.
Thursday: Boys in Charge. An old friend of ours is coming to visit. I’ve told HH that the two of them are in charge of dinner that night. Girlie will be at her grandparents and I have to work late. They can cook for me or get takeout, they’re just in charge of feeding me.
Friday: Out. We’ve managed to arrange a sleepover for Girlie so we can enjoy a leisurely dinner out with our friend at someplace that caters to adults. Don’t get me wrong, Girlie is perfectly capable of behaving at an adult type restaurant, it’s just nice to go out ‘grownups only’ sometimes.
Saturday: Homemade Pizza. This was last night and I really should’ve taken pictures. I drew lines on the crust dividing it into thirds so HH, Girlie, and I could do our own toppings. We had a lot of fun and it turned out great. I left it on the menu thinking we might go for it again next week.
Breakfasts: I made a batch of blueberry protein pancakes. I also picked up some of the double protein english muffins.
Lunches: Leftovers plus I can use the english muffins to make microwave breakfast sandwiches at work.
Snacks: I wasn’t feeling a bunch of prep so I picked up a couple boxes of protein bars along with yogurt and dark chocolate chips.
Here’s a little shot of the damage I did while making those blueberry pancakes. I read this post about eating more dessert after forcing yourself to exercise (or eat too restrictively) after and thought, “Duh! Should’ve just eaten the cake after church!”. See, there was this cake at coffee hour that looked really good but I made myself resist. Then when I was sitting alone in the kitchen making pancakes I scarfed a bunch of Halloween candy. Lesson learned. GoKaleo had another great post along the same lines today.
