Happy Sunday! Our plans were to go to church today. Then I slept through my alarm and HH accidentally shut his off. Apparently my body needed 10 hours of sleep. I’m ok with that.
I did our meal planning and grocery shopping yesterday. Today I updated our menu boards and I’ve got some food prep going on. One of the best parts of warm weather is prepping food to be grilled, especially since HH does the grilling 😉
Sunday: At home date night. HH and I will have steaks and roasted broccoli while watching Game of Thrones.
Monday: I’m trying this Italian meatloaf recipe from PaleOMG. Except I’m using premade marinara instead of seasoning plain tomato sauce myself. Also I’m probably not going to roast the red pepper. Oh, and I’m using ground turkey instead ’cause it was on sale for cheaper than ground beef. So … maybe I’m loosely basing a recipe on hers. I’ll share it if it comes out good.
Tuesday: Chicken Quesadillas in honor of Cinco de Mayo. I may also make HH and I homemade margaritas. Dangit! That’s why I had limes on my grocery list! Too bad I didn’t get them since I couldn’t figure out why I listed them. That’s ok, I have to stop by the store later to pick up more milk too. Life, it happens.
Wednesday: Chicken thighs with broccoli and salads. I’ll probably crock pot the chicken thighs. Not sure what marinade I’ll use.
Thursday: BFD/Leftovers/Takeout. I’m working late and Girlie will be with her grandparents so it’s pretty much everyone for themselves.
I also updated the old “grocery list” board that we haven’t used in ages to include breakfast and lunch options. These include the options for everyone. Only HH has the option for omelets for lunch (he works from home), Girlie is probably the only one planning PBJ’s for lunches etc. I initially just did this for Girlie’s breakfast but then decided that I’d add options for everyone. Anyone else hate the eternal question of “what do we have?”.
Spinach, Mushroom, and Cheddar Crustless Quiche
1 1/2 cups milk
approx 1 1/2 -2 cups shredded cheddar
approx 1 1/2-2 cups baby spinach
small can mushrooms
salt to taste
(Sorry for the lack of precision. I tend to make quiches by tossing handfuls of stuff into the pie pan.)
1. Grease a pie pan really well (I used olive oil). Preheat oven to 425*. Place pie pan on a baking sheet.
2. Add spinach, mushrooms, and cheese to prepared pan.
3. Whisk together eggs and milk. Add a little salt if desired. (I only added a pinch since the cheese is salty.)
4. Pour egg mixture into pie pan. Carefully place cookie sheet with pan into oven.
5. Bake for 15 minutes. Then turn heat down to 350* and bake for an additional 20-30 (until a knife inserted in the middle comes out clean).
