I was initially going to make Lindsay’s Java Chocolate Chip Healthy Bites but then inspiration struck in the form of dark chocolate covered espresso beans. Then the original recipe didn’t quite fit the macro breakdown I was aiming for. So I upped the protein and decreased a bit of the carbs. These are flippin’ delicious! HH and Girlie both find them delightful.
Jamocha Chip Protein Bites
2 scoops protein powder (I used vanilla, chocolate or mocha would be really good too)
2 tbsp unsweetened cocoa powder
1/3 cup coconut flour
1/2 cup peanut butter
1/3 cup honey
1/4 cup chocolate chips
1/4 cup chocolate covered espresso beans
2-4 tbsp water
In a mixing bowl combine first 5 ingredients. Stir then add in the chocolate chips and espresso beans. Gradually add in the water, 1 tbsp at a time, until ingredients stick together. Makes 10- 12 bites.
I think using cold coffee instead of the water would be even better. Also, you might be able to decrease the honey a smidge.
